150G white butter beans
(tinned will do)
250ml cultured sour cream
Oil & butter for frying
2 large onions – sliced
300g button mushrooms
Chopped parsley
METHOD:
- Soak beans in boiling water for 1 hour. Boil with bay
leaves, mixed herbs and salt and soft.
- Fry onions gently in the oil and butter and when soft add
mushrooms.
- When these have cooled add beans, sour cream and seasonings
and lots of parsley.
