PECAN TORTE - Lyn Staples (Agent with the winning recipe)

INGREDIENTS:
14 Savoury Crackers
3 egg whites
250mls castor sugar
100 gms pecan nuts
½ teas baking powder
½ teas vanilla essence
250mls cream.

METHOD:
Heat oven to 180 degrees

Crush crackers.  Roughly chop pecan nuts – reserve 8 for decoration.
Beat egg whites until stiff.  Beat in sugar slowly then add baking powder and vanilla essence.
Stir in crackers and nuts
Pour into greased 22cm pie dish.

Bake for 25 minutes
Allow to cool and top with whipped cream and decorate with pecans and/or grated chocolate.
